The main criteria at a choice of a way hydrolyzates receiving are: Availability and not deficiency of protein raw materials,
simplicity of carrying out hydrolysis, insignificant energy consumption and ecological safety. Sub-standard eggs are cheap
replacement of food protein (meat, fish and milk) and can serve as raw materials for receiving an environmentally friendly
protein hydrolyzate. We developed an economic way of receiving the fermentative hydrolyzate of sub-standard eggs (FHSSE)-
full-fledged basis for nutrient mediums. FHSSE-broth and FHSSE-agar on the basis of the hydrolyzate are universal nutrient
mediums for receiving enrichment cultures of microorganisms of various taxonomical groups at the high microbial level (107-
1010CFU). Biological properties FHSSE-broth and FHSSE-agar were tested on a wide set of industrial strains: Brucella abortus
19, Listeria monocitogenes "AUF", Escherichia coli antakon, Bacillus anthracis "STI", Pasteurella multjcidabovis, Salmonella
cholera suis, Salmonella dublin, Proteus vulgaris, Staphylococcus aureus. It is established that the developed medium possesses
rather high sensitivity and provides the typical growth of test strains at crops on 0.1 ml of a microbic suspension from dilution
10-7. From a shell of chicken sub-standard eggs mineral feed additive for an agricultural bird is received. The additive contains:
calcium-45.0- 48.5%; copper-9.8 mg/kg; zinc-13.2 mg/kg; nitrogenous substances (irreplaceable amino acids-methionine,
cystine, a lysine, an isoleucine, etc.) to 3.3%.
