Abstract

Understanding the intricate metabolic processes underlying starch digestion is crucial for unraveling the complexities of plant physiology. This study investigates the dynamics of metabolites during in vitro starch digestion in heartbeat cotyledon cells, focusing on the comparison between single and multiple metabolites. Utilizing highresolution analytical techniques, we quantitatively assess the metabolic profiles at different stages of starch digestion. Our findings shed light on the differential utilization and accumulation of metabolites, elucidating the metabolic pathways involved. This comparative analysis provides valuable insights into the regulatory mechanisms governing starch metabolism in plant cells, with implications for enhancing crop yield and nutritional quality.
