Biography

Dr Min Hu is a senior research scientist in RD department at Wm Bolthouse Farms Inc in USA He earned his PhD at Huazhong Agricultural University HAU He did his postdoctoral research at University of Massachusetts at Amherst and The Royal Veterinary and Agricultural University in Denmark He used to be a full professor of Food Chemistry at UAU He has published 38 refereed journal research articles and two patents He was a cochief editor of a book and author of two book chapters He had a teaching experience of 15 years and has been RD experience in industry for 8 years He has been a professional member of Institute of Food Technologist IFT in the United States and a member of American Chemical Society He served as a reviewer of peerreviewed journals in the area of lipid oxidation natural antioxidants bioactive compounds biopolymers food hydrocolloids and natural product chemistry

Research Interest

Isolation, purification and bioactivities of natural bioactive compounds, like polyphenols, carotenoids, polyssacharides and proteins.
- Lipid oxidation and natural antioxidants
- Functionality and bioavailability of food emulsions stabilized with natural polyssacharides and proteins.
