Jesus Simal-Gandara is a full professor in nutrition and food science at the University of Vigo,

Spain (born 1966), acts both as the Agro-Food Research Centre’s coordinator and EJEAFChe’s editor in-chief
M.Sc. in Pharmacy – specializing in nutrition and food science in 1989; Ph.D. in nutrition and
food science at the University of Santiago de Compostela, Spain, in 1991.
